Double Chocolate pancakes

I had my cousin over to visit me last weekend and while I got up at 6am on Saturday to get some work done she was still sleeping by 10am when I was done with my work. The perks of being a teenager!

I still remember those weekend when I was sleeping in until my mom woke me up at noon for lunch. I think I haven’t slept until noon in at least 6 years. If you’d told me back then that I would become a morning person at some point in my life I wouldn’t have believed you.

So when I was done with my work I was really craving pancakes that’s why I gathered all the ingredients to make a decadent stack of pancakes for the two of us.

My initial plan was to just make regular chocolate chip pancakes, but then I remembered that I still had some vegan white chocolate * so I chopped it up and added it to the batter as well. By the time I was styling my pancakes my cousine was awake as well and we thought that adding ‘some’ (lots) vegan chocolate spread was appropriate.

You don’t even know how happy this whole chocolate feast made us. The only sad thing about it was the empty plate once we had finished them.

Double chocolate pan cakes are a decadent way to start any day.

Instructions
  1. Put all pancake ingredients except the chocolate chunks in a food processor or blender and blend until well combined.
  2. Heat up a non-stick pan to low/medium heat.
  3. If you don't have dark and white chocolate chips or chunks just chop some regular dark and white chocolate and add it into the pancake batter.
  4. When your pan has heated up spoon in the batter. I used 2 tablespoons of batter for one pancake.
  5. You know it's time to flip the pancakes when the edges look slightly dry and bubbles have formed on top. Cook for another minute and take out of the pan.
  6. Repeat with the rest of the batter. If your pan is big enough you can do two pancakes at a time or just use two pans if you don't want it to take too long.
  7. Melt some vegan chocolate spread and top of your pancakes with the chocolate spread, the cashew butter, some cranberries and sliced almonds.
