Hazelnut Cookie Dough (sweet hummus)

I still remember those days in the kitchen when my mom was baking cake and my sister and I were helping fighting about who gets to lick the bowl. And my mom was warning us to not eat too much of the raw dough so we won’t get salmonellae. Luckily that never happened! But especially with the current news on eggs containing toxic chemicals I get grossed out just by thinking about eating raw eggs. Not to mention the cruelty that comes with most egg cartons.

So an egg-free cookie dough is needed. Now while eating a whole batch of raw vegan cookie dough with flour, sugar, vegan butter and so on might be a better idea than eating the regular version we should probably still not do that every day. I mean you could if you wanted to, I wouldn’t judge you!

But if you want to go for a healthier version packed with fiber, protein and nutrients I got you covered! I have a recipe for a cookie dough that you can eat for breakfast or as a post workout snack without feeling guilty.

It’s basically hummus, just a sweet version. STOP! Don’t run away!

When I first read about sweet hummus I was like ‘Dude, are you kidding me? This is gross.’ Man, was I wrong!
It’s far from gross! It’s delicious, creamy goodness that makes me lick the bowl every time. (Maybe I should finally mask off the camera on my Macbook in case someones watching me licking my bowl every day…)
In this case the saying ‘Don’t judge a book by its cover.’ couldn’t be more true just that it’s ‘Don’t judge a hummus by its name.’ or something like that.

I highly encourage you to give it a try and if you don’t like it the first time try it again. Add in some more dates or other ingredients. The first time I remade a recipe it was far from sweet enough for me so I experimented until I found the right amount of dates to adapt it to my likings.

The recipe makes one big portion which I eat as a breakfast. If you manage to stop eating you could also make it two smaller portions and eat it for dessert or as a post workout snack.

Instructions
  1. Thoroughly wash your chickpeas.
  2. Add the dates, hazelnut milk (you can use any other plant milk but I love the flavor of hazelnut milk in this recipe) and cookie butter to your blender or food processor and blend until the dates are fully processed.
  3. Add all the remaining ingredients to your blender including the chickpeas and blend until creamy. You can add some more milk if needed.
  4. Serve in a bowl and top with whatever your heart desires. I love to top it with more hazelnuts, chocolate, berries, banana,... but you can use pretty much anything as a topping.
  5. Enjoy!
